View Full Version : Beef Ribs fail, Brisket success

Smoked beef ribs for the 3rd time today, first time was a real fail: over-seasoned (salt) but decent tenderness, second time came out so-so, today complete fail. I must not have got them rendered well, really fatty and tenderness was hit and miss.

I was much happier with the brisket results, smoked 3 flats today, wasn't going to take or post any pick until I sampled a slice and saw this result.

My beef ribs today turned out similar to yours. As I posted in my thread I cooked some prime grade ones I got from Pat Lafreida a couple of months ago and they were some of the best things I've ever cooked, on or off the smoker. But you absolutely killed that brisket though-beautiful!!

Brisket looks great, did you cook the ribs till they were probe tender? Beef Short Ribs are my favorite cook, Brisket on the other hand. I have a 10# in the fridge for my next cook, hopefully it will turnout as nice as yours.

Beef ribs can be a greasy,funky mess if you do not hit the sweet spot!
Just sayin.Take them hotter than you think they need to be!

Beef spare ribs are a little bit trickier than back ribs. IMHO, what you have there is a rack that needs another hour or two in the pit. For me, 6hrs at just under 300 is usually perfect.

I probed in several placed with a toothpick, thought they were ready. Missed the mark I guess.

Beef spare ribs are a little bit trickier than back ribs. IMHO, what you have there is a rack that needs another hour or two in the pit. For me, 6hrs at just under 300 is usually perfect.

They were on the Traeger at 225 from 7:30 to 1 then foiled and heat turned up to 300 until 3, rested until 3:30 when I sliced and sampled.

Your brisket looks good. Cook your beef ribs like a brisket, till tender. Your ribs do look good. I think on that one picture you got a big fat pocket on one end. Looking at your pics again looks like you got another big fat pocket on the middle rib. I think you just got a bad rack of beef ribs that is really fatty. Part of cooking ribs is choosing the right rack of ribs. One suggestion I would make is start at a high temp and maintain it, like 275 or so.

Yeah, that 5.5 hours at 225* and then another 2 hours at 300* probably wasn't enough. My plates take 6 to 7 hours at 275*. A toothpick should slide easily between each bone before you pull it.

Brisket looks great!

There were a couple of fat pockets, I trimmed a little off before cooking. These were part of a pack of 4 slabs that I got at Restaurant Depot. I have one slab left to mess up, I mean cook right :pray: .
