Anaheims are looking good in the store these days & pork butt was on sale.... so I picked up 2 1/2 lbs of peppers & 2 lbs of meat.
Roasted, skinned & chopped the Anaheims.

Fired up the Performer with a chimney of KBB. Trimmed, cubed, salted & browned the pork in the DO.

Added some necessary ingredients, the chilies & some water:

Brought to a boil & then let everyone get happy for a while:

Chile Verde is always better the next day, so I'm going to make some huevos rancheros for breakfast manana. :becky:

Looks yummy. I won a chile cook off at work (very amateur) with a smoked pork chile verde. Very similar to this but I used roasted tomatillos.
