About a month and a half ago, I bought a 12lb select brisket from Smart&Final. I was gonna cook it for SuperBowl, but plans changed so I ended up wet aging it for about 3 weeks. It was about that same time that I started dry-aging in Umai bags, and I decided to throw this brisket into a bag as well. Umai actually has a video of dry aging brisket, although many people have said that dry-aging a brisket is a waste of time...

Well, now it's been about 3 weeks in the dry bag, so that means at least 6 weeks of age since the kill date. I don't really have a cook date set, so I guess I'll just let it ride maybe to 45-days or so.
