Brisket time !!!

Photo enhanced with "chrome" filter. Don't know why it made barrel orange. It's white where I dumped out ash !?$&

13# brisket seasoned with SYM and Green Chile rub. Fuel is 25% Ozark Oak and 75% Stubbs with a tall boy size amount of applewood. May add a couple more when it dies down. Meat hung at 1000. Unless it's to bomb the coals with an apple chunk Im not lifting the lid till 1500. I've got some electronics now- Igrill Mini, but I may wait a while if and when I decide to put it in the game.

Looking forward to this. I messed up my last PBC brisket. I don't think I cooked it long enough.....:oops:

I will slice it for trophy shot, but honestly the point and flat will all get chopped and mixed together. It's pretty versatile chopped in soups stews all types Mexican etc etc.

At 1522 Thermapen read 164 in point. So removed and wrapped in butcher paper, inserted grill grate, laid wrapped brisket on grate and closed lid. Next check at 17-1800

Chili turned out great. Carroll Shelby's used all 4 packets (mix masa cayenne and salt)
I don't always use corn powder but went really well with the Lite beer for liquid.

The ground chuck was a chuck roast I ground and the pulled pork was a chipotle pork butt we smoked pulled and froze. Nice texture and flavors.
