Had some family in town so I cooked ribs and brisket.


I used these new rubs from thebbqsuperstore.com

Found a 18 lb choice brisket a Walmart and was able to fit it in the 18" WSM after wedging the brisket between the handles of the grill grate. There was no room to spare.

Two cookers rolling at 325-350F.
Ribs on the Jambo and brisket on the WSM.

Two hours in with no water pan..the white smoke is from the fat dripping over the coals. A grease fire started while I snapped the pic but once I put the lid back on all was well.

Of course no sliced pics of the brisket but I assure you it was buttery meat goodness.

Looks Good but why didn't you do brisket on Jambo too.?

Looks good! but the grates on that Jambo are just way too clean...

It looks like you had yourself a fine day there! I like the cooking area photo best, I love the relaxed feeling I get sitting in that chair and watching the smoke, tending the cooker, drinking a cold beer etc. Your results look awesome. I'm sure that your guests will be looking forward to the next invite too. :thumb:

I would have asked the same question.

A friend dropped off the ribs after I put the brisket on. There was no water pan in the WSM and I did not want to burn the ribs so I said screw it and fired up the Jambo.

Looks great. I too wondered why the two smokers.

A question on the brisket. Did you trim it? Maybe I am just more aggressive with the hard, yellow-white fat between the point and the flat than you are.
