Trying the BluDawg method today for the first time. Got a real nice looking 9#'er...biggest they had but the point is nice and thick and flat is nice an even cut.

Just salt and pepper and 275-300 today....no mustard, no oil, no spritz, no injection, no foil, no cooler/cambro.....meat, heat and butcher paper for me today.

Went on a couple hours ago now, cooking with Maple, Oak and 1 split of Cherry today. Its raining on and off today, but the MD90 is rockin steady and beautiful plume of almost clear blue smoke rolling out of it.

Brisket is wrapped in butcher paper and back on.

Thanks Dawg, I am surprised at how juicy the outside is with out spritzing...

Oh and BTW, not spritzing is going to hurt my beer fund....I have way too much time to drink instead of open the smoker and spritz all the time!

Off and resting now...probe tender. Smoked for 3.5 hours before wrapping...was 9# instead of the 11+ Dawg mentions in the recipe. Put on at 1130 this morning, wrapped at 3pm pulled to rest at 515.

Sliced at 150, great smoke ring, bark and flavor. The flat didnt turn out 100% today, but closer you got to the point the better it was.

When you got to the back of the flat, it was down right perfect! Im surprised the flavor I got out of this with just S&P vs a rub and Spritz. Will do again for sure! Had great bend, great pull, just needed a little more moister out on the end of the flat.
