So while I have been smoking for a few years now, I have never tried smoking a fatty. I am planning on smoking one this weekend . In looking over various posts and blogs I have seen numerous stuffings being used. I was wondering what some favorites are so..... What is your favorite(s) fatty stuffing??

....I know that's not a stuffing, but honestly, nekkid is my favorite way to go.


We do like some cream cheese with saute'd onion and mushroom in it too, but pretty hard to beat a nekkid fatty.

I gotta say, I didn't believe the hype for a long time, but a naked fatty is the best. Just a nice log of Bob Evans or Jimmy Dean rolled in a good BBQ Rub (SM Spicy apple or Sweet and Spicy are my preference) Yum yum yum.

Nothing for your first one....

Usually when I make them, it's just to use residual heat up from my PBC, so I don't feel like going above and beyond after whatever I just cooked comes off.... Just some rub and drop the grate in.

If I do stuff it, I usually do sweet peppers and pepperjack cheese.

Stuff it with cheese and another meat :-D. Or maybe even a little sauted onion and garlic.

My favorite stuffing is fried tatoes, onions, jalapenos, ham or smoked meat, scrambled eggs and cheese. A breakfast fatty.

Slivered red onions, green/red/yellow peppers, mozzarella cheese inside an Italian sausage fatty! While a naked fatty has a beautiful simplicity and can be used in other recipes more easily, a stuffed fatty takes the cake for straight up deliciousness! Do one stuffed and a couple naked, they're ALL tasty for different reasons and uses!

Crispy bacon, cheese and a little sauce. the Bacon Explosion. YUM.

But an unstuffed fatty wrapped in bacon and covered in my rib rub is amazing.

I like em best nekkid. Ms Gwen likes em stuffed. Finely chopped jalapeņos, finely chopped pecans and shredded Colby Jack cheese.

Naked sounds nice and easy I'll definitely give that a try. I have smoked my own meatloaf recipes that way and really like that.
Cowgirl, thanks for the link to your blog, it's down right inspirational. I've done the bacon weave thing before with stuffed pork loin but your diagonal weave is a thing of beauty. Any special tricks to get it to come out that pretty??

Thank you Larry! I lay out the bacon on a sheet of saran wrap, then start the weave in the center and work my way out. It seems to keep tighter that way. Hope you have great luck with it!

I usually make at least two. the first one is sliced and eaten as it is, and then the second gets used for fatty gravy, fatty pizza, fatty benedict or sliced and put on a biscuit with a slice of cheese and some pepper jelly.

As far as a fatty goes, I look at it as far as what meal I am gonna eat it with.

By far the best one I have enjoyed was a breakfast fatty. The wife and I went to Sams club and bought a box of lumber jacks. A lumber jack is a piece of sausage on a stick wrapped with a maple syrup pancake. We pulled the stick out (obviously) and rolled it up in a log of Jimmy Dean Mild. Oh LORD was it ever good!!

Naked Fatty's are great but if I'm doing a Bacon Wrapped Fatty I like use lean ground pork, throw some rub on it, stuff it with onions, bell peppers, jalapeņos, shredded cheddar and bbq sauce.

Once it's wrapped throw some more rub on top of the bacon and sometime but not always I'll glaze the top with more bbq sauce.

I like doing anything with cheese. We tend to stick with mushrooms/cheese. But cheese, green peppers, onions is another good one!

Funny story, I Love making "smoking fatty jokes" while I'm smoking fatties.

That looks really interesting in a good way. Is that the muffins, bacon and maple syrup all mixed together? I don't think I would have ever thought to try muffins wrapped in sausage. Brilliant:clap2::clap2:

I tell ya, I fell in love with this one, chicken cordon bleu fatty with a garlic butter pizza crust. Simple as all get out but it's truly a wow experience.

2 pounds ground chicken or turkey
Thin sliced deli ham
Swiss or other creamy white cheese
Ball of pizza dough from a local pub
Bacon lattice

Garlic butter for basting the bread. Cook the fatty as normal til done, roll out dough and wrap around fatty, pop in the over at 350 for 20 minutes or until crust is golden, baste one more time with garlic butter and watch it disappear.

But the one everybody goes crazy about is one I originally made for the kids.
Kroger mini pancakes drizzled with maple syrup rolled up in JD hot with rub, its not just for kids!

Fatties are a wonderful thing. Like a blank canvas or slab of marble they are transformed by the imagination and inspiration of their creator. Possessing neither of these, mine usually mimic my favorite sandwiches. Coincidentally, I smoked two yesterday, one nekked & one wrapped, as an appetizer to a smoked rib roast. Nekked was a variation of a hot Italian sub with ham, salami, pepperoni, mozzarella and creamy Italian dressing cased it hot Italian sausage. Wrapped was a kind of Philly cheesesteak using last week's leftover brisket, onion, mushroom, jalapeņo instead of bland green pepper, and sharp cheddar cased in s&p'd 80/20 burger and, of course, the bacon wrap. Neither lasted even though everyone knew they were getting prime rib (i.e. rib roast) soon. What can you say about meat stuffed with meat? It's kind of like sex but, for an old married guy, even better!��

first fatty should be mandatory to do unstuffed with a little bbq rub on the outside. Great on biscuits. I always make sure I have enough leftover for the next day's breakfast.

Go crazy and do some cajun filling with some lightly sauteed peppers,celery,onions mixed with some cheese, or get real crazy and throw in some shrimp sauteed with the veg...a little wild:shock:

I read about a variation the other day that I just loved. Mix soft cream cheese with some brown sugar and a hot rub like oakridge death dust. Spread on the fatty, roll and wrap in bacon. I tried this and loved it! I have done lots of fatties and always get great reviews, but this one by far had the best reviews and was gone in no time flat.
