View Full Version : Sriracha/Valentina's Slathered Corned Beef for Pastrami

Got the 2nd half of a corned beef I got at RD a while ago getting some smoke today. Then I'll finish off in my pressure cooker to do a little steam action. Going to smoke it around 4hrs at 225-250 then into the pressure cooker. Though it might be a little snug :becky:. Actually going to make my own corned beef next weekend with a brisket I bought today (haven't made my own in a while) and will probably post about that too later on. Anyways here is what I've done so far today...........

Right around 6.5lb on this back half of the brisket with point and flat combo

Then hit it with sriracha and valentinas for a slather to see what happens. I'm not a big slather guy (mostly just referencing mustard) since if it doesn't add anything to the end product for me I leave it out. Still interested to try this and see if any flavor or heat get added.

Starting up the egg. Been trying these super small "splits" that I just cut down from larger ones to see how they do. That and I didn't feel like going into my camper for chunks :crazy:

Also to go with the pastrami (since we'll be making them into tacos later) I wanted to make a thousand island type slaw. Had kale so made another kale slaw.

Thanks. I was just randomly was searching recipes online as I do a bunch and stumbled upon a kale slaw. It's a fun change to just cabbage if you haven't tried it.

Looks great....also interested in how that slather turns out for ya. Like you I don't see the sense if it doesn't come through in the final product.

I'd go with the blue. It really brings out the gold shine in his eyes.

Brisket went into the pressure cooker. Was closer to 5hrs instead of 4 in the smoke because I stopped paying close attention as I was switching drinks to this and talking with my wife........

Here is it is out of the egg and then into the pressure cooker. Like I thought it didn't quite fit :shock:. Beat it with a hammer a few times and it starts to cooperate :clap2::clap2:

But a little squeezing got it in there. Set the pressure cooker to "meat" and 45mins

Also I said I would do some more videos this year of cooking and can't get full videos of all cooks, but trying to even shoot some short ones to help. This is how I probe to make sure it's ready for the pressure cooker. Hopefully it helps too! If you have questions let me know :becky:

All done. There was a little bit of heat on the pastrami. Nothing crazy, but just enough to compliment it. Will have to try it again to confirm. 1 is not a big sample size :-D. I liked it.

Might have been better tonight after a little char and the pickles were a really good addition :-D. Still noticed a little heat when eating it cold too today.
