View Full Version : Beef Brisket Rub Recipe

Recently, I unfortunately lost all of my files on my computer including a brisket rub recipe that everyone loved!! I had got it off a website but can't seem to find it anywhere. It was fairly simple made with salt, black pepper, garlic powder, and white sugar, it possibly had onion powder but not exactly sure. Just trying to find that recipe or the measurements for this recipe if anyone out there can help?

I personally use more onion than garlic , everything real coarse

This. TN here and wouldn't have it any other way but TX-style. Just seems wrong to be putting sugar on beef. I guess I'd be OK with the onion and garlic, but the combo of salt and pepper on beef is just perfect, and always will be.

Measuring by weight is definitely of importance to note, though.

By weight, 40% kosher salt, 40% black pepper, 10% onion powder and 10% garlic powder.

No sugar. It's just going to burn. Kosher salt, coarse ground pepper, granulated garlic, and granulated onion is a great base for any piece of beef.

After a lot of experimentation this has become my go-to recipe both for ourselves and customers.

1/4 cup kosher salt
1/4 cup coarse black pepper
2 tbsp. Espresso
Strong 1 tbsp. garlic powder
Strong 1 tbsp. onion powder

Optional ingredients:

1 tbsp. smoked paprika
1 teaspoon cinnamon
1 teaspoon chipotle powder

Arron Franklin's Evolving Base Rub from his video (below)
*Note - his measurements are in "parts","bits", "smidges", and "touches" so these are approximates as seen by the volume added in the video.

Arron starts with an even mixture of salt and pepper for his brisket rub
1/2 cup of course black pepper
1/2 cup of kosher salt

Optional ingredients for Texas style brisket rub
(or an all purpose rub).
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon of chili powder

He says he wouldn't add sugar to a beef rub, pork rub, or a rib rub, because sugar burns over cooking time making it dark, whereas chicken cooks faster so it doesn't seem to burn as easily.
