View Full Version : Big ol brisket Flat (PRON)

Last time I tried to cook a brisket (1st one ) was about 2 years ago. I could a whole packer and it turned out great. Today I'm trying a flat since that's all I could find. Injected and let sit for 12hrs put on the kettle at 5am.

This is 3hrs in. I'll keep posting as I check it every few hours

That looks like a nice flat! What temp are you cooking at?

So far my snake has been holding temps at 260ish. ill see what the inside temp is in a few hrs and might go to about 300 to speed it up if need be

Starting to look really good. IT is right around 180. We are almost at 8hrs so far. I did open the vents wide open for the past hour temps have been around 310

That is the only kind of brisket I can get around here. Costco flat with very little fat and pretty high price. I have not tried one yet. Really interested in how yours turns out. It already looks great.

Yea that's why I never cook brisket or much steaks for that matter. Meat around me is insanely priced. Both my Costco and SAMs only carry flats. I can get packers from butcher but then I'm looking at even more per lb.

Trimmed Flats are $3.99/lb here tho.......... Never bought one.........

Finished product. Took 10hrs I ran 260 most of the time And then ran 310 the last 3 hrs. Turned out pretty good for my second brisket. Overall I'm happy. Some of the sides were alittle overdone just to how close it was to the direct heat of he charcoal. Now to talk the wife into a bigger grill.

Great looking brisket!

As to price...Get mine from a local farm....cows out eating grass and suff...I know, crazy right!!!

Yup it costs 5 bucks a pound but Ill pay it for better beef.

Did a light coat of the Obie's and mixed the injection with beef stock
