View Full Version : First time brisket timing for day cook. Split in half?

So you all helped me pick a Traeger Junior Elite about 16 months ago for my BIL (http://www.bbq-brethren.com/forum/showthread.php?t=197192). He is ready to try making a brisket. We are going down to visit on Friday night to see a Thunder game. We plan to stay the night and cook a brisket for a meal on Saturday. I think he wants to get just a Point or maybe a whole packer. However, I don't think an over night cook would be the best way to try this out.
If we get just a point, or split a packer in half, can anyone offer a rough estimate on timing? (I get that it is done when it is done and there is no specific temp.)
We will probably prep on Friday night so we can throw it on first thing on Saturday.

Seperating wont save much time.

How hot ru cooking makes a difference.

I allow 8-10 hrs for fast cooks 14-16 for my slow.

Usually done one the short side but the extra 2 hrs is cushion

Haven't really planned the cook temp but I guess we can set the traeger on 300 to speed things along.

My other option is to take my heatermeter with me and set up alarms so it can run overnight. IDK how long a Traeger Junior can run without a refill. Overnight would be more like 250f.

I am trying to build their confidence though and running out of pellets overnight and having to refill and monitor might not be helpful.

At 225F around 1.5 hours per pound
At 275F around 1 hour per pound

my treager won't run all night with out more fuel, i wouldn't go 3 hrs without checking

More great info! I found that the Traeger select and the Junior Elite both hold 18lbs.

What time do you need it ready on Saturday? I would go for a whole packer. If it comes out bad you can just make sliced beef sandwiches out of it. A couple pickles and onions and a little sauce will make it better.

We are flexible, lunch would be awesome, dinner is likely though.

Lunch pretty much requires overnight.

Come up with a cook plan and run it by the board, they'll let you know what they think and will even talk you through the actual cook


Edit: i prefer brisket for lunch too :becky:
