Getting set up now to do a brisket for Christmas Eve dinner tomorrow
Have a playlist ready for the day that includes

a little zydeco music will also be there including

a little variety with

Old Springsteen
Hendrix
of course others as the mood strikes!!

I chose this one it had a huge flat and small point which was unusual
more as the cook progresses tomorrow

Turns out that 80 lb case of pork butts gave me a bulging disc. But I am dealing with it

Brisket aint probing tender yet, it will come down to the wire on this one. I was hoping it would be resting by now but I did get a late start on it.
