Looking for some ideas for Christmas Eve. Doing prime rib and beef tenderloin at other family functions this week on my BGE so I'm looking for a non-red meat option (as instructed by the boss lady).

I do pork shoulders and brisket all the time so it doesn't feel like that special of a cook. Any inspirations would be appreciated!

What about a Porchetta? The "other white meat," and has a bit of flare / creativity to it.

I like to do Cornish Hens as a switch-off for the usual fare. It's poultry, but different form the usual suspects. Cooks fast too.

Pork roast.

Bobby Flay's recipe (http://www.foodnetwork.com/recipes/bobby-flay/brined-roast-rack-of-pork-with-apple-chutney-and-sour-mash-sauce-recipe.html) for sour mash sauce and apple chutney is the bomb. Just be sure to turn off your fire alarm before you start the sour mash sauce - 2 cups of whiskey and an open flame can make an Old Testament worthy pillar of flame.
