View Full Version : Another Stuffed Fatty

Had to make a "passing dish" for a Christmas party for tonight. For some reason:crazy: a fatty came to mind. Started with three pounds of sausage, two pounds of bacon, about a pound of pulled pork mixed with Sweet Baby Rays and assorted peppers. Made a core of pulled pork and cheddar wrapped in bacon, rolled the sausage, and wrapped with another layer of bacon. Then dusted everything with a dry rub. Forgot to get a pic before it went on the Primo, but this will give you the idea. Using Cherry wood for the smoke. Will add Pron when I pull it off. Thanks for Looking

Out of the smoker at 165 internal, double wrapped in foil and in a warm oven til we leave for the party.

The money shot! Sliced it and put it out with a huge spread of great food. It was the first plate gone, with a bunch asking who made it and asking how to make it!!

Fatties are always a huge hit whether they be naked or stuffed. Your stuffed one here looks really yummy.

Didnt plan on smoking anything today...... Bacon and sausage thawing now. This site will be the delish death of me
