View Full Version : Rib roast ready for smoke

I got a nice 5 bone 13.2 pound choice standing rib roast for our Christmas dinner tomorrow. Slathered with Worcestershire sauce and rubbed with Montreal steak seasoning and some extra granulated garlic, kosher salt and fresh cracked pepper. It is foiled up and in the fridge to get happy overnight. I plan to smoke it on Maxie with KBB and hickory chunks and maybe a chunk of mesquite for fun.

Looks great! that's exactly what I'm planning as part of a holiday feast, and on my WSM 22 - will be my first. Can't wait to see the results and hear any details of the cook. Hope you're planning to share them. Curious about your sides and most importantly - libations?

I'm doing the same thing. I can't decide between the rotis... Or slow cooking it in the XL Baby reverse sear style.

I'm gonna steal your Worcestershire slather idea. That sounds tasty. And kudos for spelling Worcestershire right. I was just gonna type Lea & Perrins and make it easy on myself but after three tries I finally got it right! ��

I'll post up some details of the cook. Just hoping the wind holds off. Maxie does dot like to work in the wind. I will get some smoke on the meat even if I have to finish it in the oven.
Ms Gwen is making the sides. She is making some kind of cheesy potatoes, green beans and broccoli salad along with yeast rolls. Libations will be Natural Light, Miller Lite, Sierra Nevada Oktoberfest,Shiner Bock and some kind of red wine. I will be imbibing some George Dickel #12 Tennessee Sipping Whiskey. :wink:

This was on sale here for $6.99 a pound. I went ahead and bought the whole thing. Had the butcher cut four big bone in ribeyes and leave the center for my roast. The steaks were fantastic and I'm pretty sure the roast will be too. The sale is on through next Tuesday. I will go back for another one on Monday. :wink:

Many moons ago I was a Jack fan. About 25 years ago a co worker bought me a bottle of white label Dickel to show me how good it was. I've been sipping it ever since. :wink:
