I picked up a Select Grade brisket last weekend and cooked it with some Keri Hog Apple Beans... Lots of full stomachs when it was all done!:biggrin1:

Not much marbling on the flat..

I fired the Jambo to little below 300F with Hickory and Pecan

I wrapped into the 4.5 hour mark.

The flat was probe tender at 8 hrs .. I let rest for 4 hours in the cambro.

Overall it was a solid cook for a Select Walmart brisket...2.59LB

I went today and they had all Choice briskets that looked fantastic.

Excellent looking brisket. So glad briskie prices are down. Headed toncostco Friday to pick up a prime packer for $2.98 lb......YES!

i like it when they just start to crack on their own but not so much that they crumble. that had to be a really good one to eat!
