Finally found short ribs around here at a decent price. Restaurant Depot had them for $3.89/lb. Couldn't pass them up. I somewhat followed Aaron Franklin's method - I put a light coat of hot sauce on before putting the rub on, but I used SPOG rather than just salt and pepper, and I cooked around 275-300 and spritzed with beef broth about every half hour after three hours cooking.

After about three and a half hours:

All done. They cooked faster than I expected - they were done in about 6 hours:
