View Full Version : 60lb of Sausage Making: Beef, Pork and Chicken.

Finally cranked up my new grinder for 60lbs of sausage and 20lbs of ground chicken to just seal (so 80lb total grinding). Did 20lbs of each chicken, pork and brisket with 2 types each. So 6 different types. The #32 grinder is pretty awesome. It chews through the meat so easily. The stuffing works well, but I'm picking up one of the dedicated stuffers from Gander Mountain today. Here's lots of the pics. Did some grinding and then stuffing and also did a grind/stuff at the same time combo, which works well.

I was only going to do about 15lbs of chicken that I had in the freezer, but when I stopped at RD and saw boneless skinless thighs (which is what I normally get) for .77/lb I had to buy another 40lb case :becky:. Last time they were $1.19/lb which is still a good price for me, but that was a crazy deal. Ground chicken is $4/lb at most grocery stores.

I'll post some more smoking pics later. Going to gander now for the stuffer :clap2:. Also still got some vacuum sealing to do.

Looks great! I use the KitchenAid grinder attachment - but you make a compelling case to get a dedicated grinder!

The shot with the casing on the horn is what did my daughter in. She'll no longer eat cased sausage after helping me last time. BTW, that's a coupla beautiful machines, although you need to read the grinder manual. You're not supposed to put your hands or arms or other parts in there.

I tried to go elbow deep, but it didn't work :biggrin1:. The hand crank suffer is pretty sweet. Goes so much faster. Only did 5lbs from what I left yesterday of ground meat, but it is so nice.

Shirley fired up. Some friends coming over later to try. Will be sad when I sell this one. I'll have an official for sale up in the sale section in a few weeks. If anyone is interested though you can always PM me.

Some of the sausage on the smoker and the rest sealed up. Still have to bag up all the normal ground chicken.

Yeah I almost love my vertical stuffer too. Got a new LEM 5# at a great price, and had the opportunity to get an almost new LEM 15# for not much more. Convinced myself that I'd better get a new one, warranty etc yada yada. After nearly 50# of venison brats a week or 2 ago, I wish I'd bought the 15#. The 5s nice, but reloading on monster batches gets old.....

All the tips are off. Sealing up most of them for freezing. Sausage still smoking. I have the pork and beef in the warmer doing a lower long smoke. The chicken just went on a bit ago and is in the main chamber.

This year most weekends you don't want our comp stuff :biggrin1:. Here's 5 of the 6 recipes I made. One of the pork recipes is a pre blended spice mix a friend gave that I don't know what's in it. I like the chicken and pork and they were great. The beef recipes were fine, but I'll tweak them some next time.

10lbs Chicken
4T Salt
2T Garlic
1T Cumin
1T Corriander
2T Pepper
1 Onion
4 Jalapeno/Habanero
1 Bunch Cilantro
1/4C Garlic Fresh

And as a follow up to this for the pork and beef I added 1tsp of pink #1 per 5lbs since I will smoke those at a lower temp for a longer period of time.
