I have been curing and smoking pork belly for about 3 plus years. I have always bought my belly already skinned and ribs removed. I have since found a source that is much cheaper and better section. The problem is I have to skin and remove the ribs. I have skinned plenty deer in my life but these pork bellies end up looking like it went thru a shredder. Does anyone have a tip or better way to do this.I have used my deer skinning knife and an assortment of other with the same result.

I cool mine down in the freezer prior to skinning and use a sharp knife.

I find it best to let the butcher handle these tasks... I too make a travesty of this task that many make look so simple..
