T-shirt weather in December, I threw a 15 lber
on at 9:30 Oakridge Black Ops -
then 2 wrapped fatties...Oakridge Dominator on them.
Wrapped in a paper Whole Foods shopping bag.
I have all the pics, the Brisket is wrapped in towels now, my Internet is so slow it will be HOURS before I can get some pics, that' why I couldn't do a live cook, unfortunate, I have alot of pics.

Blanket wrapped in towels for 2 1/2 hours.
Some guy Bludawg said to do it somewhat this way, but wrap and rest for 2 hours or so.
It's worked 3 out of 3, so I envision this will be 4 out of 4!

Here's a bend test for the flat.
Notice, it's not moist - it's underdone - -
The point was silly moist, this has chili written all over it - which is awesome, except it's 70 degrees outside!!!

They usually firm up and slice nicely. I will vacuum pack the 2nd one to keep it fresher.
I use it for my breakfast:
1 egg, 1 slice fattie, a big spoon of pre-fried onions, peppers, japs, veggies,
all heated up w/ maybe cheese in a large burrito. Hot sauce.
Plenty for breakfast.
I roll it in aluminum foil, keep it in a warm hat, take a bite every 1/2 hour or so, maybe keep it on my work light to keep it warm up until lunch..
