Made some filet and scallops tonight. The filet turned Out amazing but I have some questions. My mom gave me the filets and she had them frozen for a long time and they were rough looking. I used the reverse sear for the first time which was awesome! Then gave it a quick sear.. My question is my thermapen r600 was reading 137 when I pulled them off and 150 after rest. Clearly the steak isn't well done. What could be the issue

Scallops and steak look good. Carry over is why your temps is higher. I also suspect that you didn't stick the probe in the same spot or way as the first time. I usually don't test for final temp once it's pulled. Meat is looking good though.

no I normally don't either but even the 137 temp is more done then how it turned out. I probed numerous spots and got the same result. I'm wondering if the meat being frozen gives off a different temp number then if it's fresh. I usually go by feel and I did that also on this steak I just feel that if I would of been relying on the temperate and not the feel it would of been way undercooked

Check your accuracy of the thermapen. Stick it in boiling water water and ice water, depending on elevation for you should be 212 and 32.
