I just picked up a 4 pound fillet of beef. I don't plan on cooking it until next weekend. Should I place it in the freezer or will it hold until next weekend?

Look at the sell by / use by date on the package as a guide.

Keep in mind this is a guide and if properly refrigerated and stored it can exceed the date with no problems. If it's weeks past the date then freeze and thaw in the refrigerator for two days before cooking.

I would say, under normal circumstances the date is good, keep cold in the refrigerator and enjoy.

You are good as gold.... Sell by 2016/01/02 will give you extra time past that date as long as it remains cold..

In cyro-packaging nitrogen is introduced before sealing to void the packaging of oxygen before removing the air and sealing. Keep it refrigerated is all that is required.

I have kept them in the cryo in a 34 degree fridge for 2 weeks after the date and they were great..
