Making around 50 lbs of sausage with my new grinder and will be smoking some of it. Also rib tips tomorrow.

Happy Phriday, Phu! Only thing for certain is a couple of tri-tips, but I'm already drooling over that. Might give one of them the trisket treatment.

Big, thick ribeye on the grill (Combo of OakRidge Santa Maria + Carne Crosta), with some grilled asparagus and roasted squash for dinner tonight... It was terrible... had to make it disappear quickly (already devoured, as it's 2230 here).

I'll hit the Commissary tomorrow morning and see what I can find for fun and experimentation: Beef ribs? Tri-tip? Chuckie? Who knows!?

COS - don't leave me hangin'! What's smokin' up north?

30 lbs of holiday bacon thats been curing for a week today.

60lbs of brisket and 65 lbs of pork butt for Church luncheon on Sunday.

Speaking of... I need charcoal.

Lets see. Think I'll smoke a naked fatty with some ABTs then try my very first run at a homemade grilled pizza with the meat of said fatty, mushrooms, and onion.
