At the end of the day I've always thought that Eastern NC and Central Texas BBQ have the most in common with the difference being the wood available and the meats available. The process and the passion needed to do it that way are identical.



Side note: Outstanding video quality. I put this up on my 4k tv and it didn't show any signs of smearing or bad video.

I should live in Texas. I have the same passion for BBQ as the folks in this video. That passion is a pretty rare thing in my area. The phrase that the guy used at the end is so true. "BBQ is family"

I love this. Here in Louisiana food is as much a part of our culture as is our bloodline. Being from an Italian family and marrying into an Irish family we are constantly enjoying not only good food but the skill and work it involves to prepare. It's the gathering and the conversations that transcends just sharing a meal. Much respect for the people of central Texas!

Great video - thanks for posting. Southern Foodways has some cool ones of whole hog spots in the Carolinas and TN as well. Different region, different food, different people, same feeling. Love that stuff!
