Smoked a baby beef chuck roast today. I say baby because this little thing weighed in just under 2 lbs. You've no doubt have bigger steaks than this. Smoked it with Jeff's Naked Rib Rub using a combination of hickory and oak. I cooked this to slice, rather than to pull, for sandwiches. My wife said she liked it better than brisket which was music to my ears since it cost significantly less than brisket. Anyway, thought you might like to see it. Thanks for looking.

About 225 +/- for 2 1/2 hours then to 275 for another hour. Internal temp was around 170 when I pulled it. Wrapped in foil and into 170 degree oven to hold for about 45 minutes.

looks great and nice bark , I never smoked a chuck roast before but after seeing yours I am tempted .

I'm surprised a lot of people haven't tried smoking chuckies! I think it has a lot of flavor! I smoke and slice chuckies all the time! Sry I cant see your picture, it doesn't load for me for some reason! I'm sure it looks good!

Chuckies are one of my favorite things from the smoker. Most of the ones I smoke are in the 2-3 pound range. Yours looks really good.

Great looking slices! Just did my first one last weekend. Certainly will do again! Did mine to pull as my kids love pulled pork so i figure it would go over better.

Damn, that looks good. We do these alot indoors and I have done a handful on the pit for shredded, but always wanted to try and nail it for sliced. Thanks for the inspiration !

I usually just make pepper stout beef but I'll have to give this a try, looks really good.

Looks great! Lots of bark.

I've come to like cooking up smaller hunks of meat. I've taken to occasionally taking a pork butt and cutting it into smaller hunks. then smoking as per usual.

Increases the meat to bark ratio ha. And no it doesn't dry out.
