Is that a baby back rack with a loin? That is a strange looking cut. Almost like a crown roast but a little different.

Using Apple and Oak for smoke and spraying with ( oil, rum, apple vinegar, and a touch of maple syrup

Someone on here told me to rub a little dawn dish washing liquid on the face of your thermometer and it will clean up easier.

The market called it a "French cut pork rack" I only know I started drooling when I saw it!!

I know I gotta do one of them. That looks great. A local meat market offers whole pork loins, bone in, cut anyway you want. I think I'll print your picture out and see if he would be able to cut me one like that. The presentation could be awesome for a holiday table setting.

Check out a crown roast of pork. Very similar if not the same cut, but rolled. Awesome presentation.

Okay, I just gotta do a crown roast stuffed with fatties! :rolleyes:

Dawn is awesome, I use it all the time for my thermometer, Dont use it as much as my thermopen, but Dawn does the trick.

You guys still have Hannafords up there? Jealous mod. We had one and it turned into a Krogers about 6-7 years ago. I figured that Kroger bought them out. Man, I used to love that store. They had Williams brand deli meats and one in particular was a garlic herb turkey. Awesome sammich meat right there. I havent been able to find it since Hannafords went away.

That looks great. Can you tell us a little more about how you smoked it (time, temperature, etc.) It's Sunday night and I'm looking for ideas for next weekend!

Cooked it 7 hours at 225 mopped it the last hour I should have injected it with apple juice cuz i was just a touch on the dry side but my 18 yo LOVED it. Next time i do this cut i'll know better what to do
