This is my version of baked cabbage that has been well received over the years. To start take the cabbage and quarter it through the core. Next sprinkle a heavy amount of coarse ground black pepper on the cut part. We like a lot of pepper and after it is cooked you hardly know it is on there. Next I put 3 patties of butter on the top. After that I lay 3 half slices of bacon over the top. You can now put them in a pan and place in the smoker for an hour to take on a little smoke flavor. If you leave them in the smoker uncovered much longer they dry out,so I cover them with foil after the hour.Or you can wrap each quarter in foil real tight to seal them and place in the smoker or oven. In the oven I cook them at 350 degrees. It takes about 1 1/2 hours to 2 hours to cook.It depends on how big a cabbage you have. They are done when you squeeze them and they are soft to the touch. In the smoker time will vary due to temps and size of cabbage. You may alsoplay around a little this by using different spices, bacon, etc.but this version is just plain old southern cooking. Hope ya'll enjoy.

Thanks for this post. I am a bred and born southerner from a family of great southern cooks; but I have never heard of baked cabbage. You can bet I will know all about it within the next few days. :-D

Hmmm, that's a nice tweak on cabbage for sure! I do the whole head, wth GSP and butter. Never thought about bacon!

I would like to try this but I'm interested to see if you ever have skipped the butter since you are using bacon?
