I smoked three slabs of bacon this past weekend. My freezer is now well stocked. One slab was for me (no sharing with my wife), that is the ghost pepper bacon. I use local Berkshire hog belly. The tough part about slicing it up was having to fry up and eat the "scraps". :grin: Here's a shot of a couple slabs before they went into the refrigerator to cool before slicing.

I believe they were about $9.00/lb. Local farm, free range, cut to order. I think that's about $2.00/lb more than I was paying at the butcher for whatever belly they had so I am happy with it. Plus the bacon is so goooood!
