I think I have the menu for the Christmas banquet finalized...

It goes as follows...

Spring rolls
Paper-wrapped pork
Pork- stuffed mushroom
Lionís Head Soup
Tea-smoked Ahi
Grilled Hoisin chicken skewers
Deep-fried tofu with stir-fried snow peas
Red-simmered beef
Char Siu/Cha Shao
Rice pudding and almond cookies

I tried to use as many different cooking methods as I could, so I could have multiple items cooking at the same time. As it is, I'll need the smoker, the grill, the deep fryer, the slow cooker, the oven, and the stove-top.

What do you consider "not healthy?"

I'll be non-alcoholic, due to conflicts with my health problems. Everyone else is imbibing in various things.

Banquet coming together. All recipes set, grocery lists made up. Testing a few of the recipes before-hand. Tomorrow doing red-simmered beef.

And I have a 13-lb top sirloin roast to do something with, courtesy of my employer - a Christmas "bonus".
