I always forget how deliciously easy it is to cook lamb loin chops. I've smoked them, grilled them, boiled them in a bag...this is one cut of meat that I think is almost impossible to mess up, so long as you don't overcook them.

A little garlic, rosemary, parsley, salt, and pepper...

Woke up to rain out here in California, so I thought maybe I'd try to cook them by candlelight...

This is about 10 minutes in...at this rate, I realized that I'd be going hungry for quite a while and need a few more tea light candles...

So I enlisted the help of my teracotta pig grill...

Ahhh...much better...now we're cooking...

It was slooooow cooking this way, but eventually things got yummy looking...

One of the things I've always liked about lamb loin chops is that they look like thick little mini porterhouse steaks...

Delicious little lamb loin chops...I'll take this over beef day in and day out...

I was glad to be able to cook indoors despite the rain outside. I learned that cooking with candle light is a really tough proposition, especially if you're hungry...just not enough heat to do anything. I also learned that charcoal grilling under the exhaust hood is a great indoor option. I was expecting to trip the smoke alarms, but the exhaust fan actually created a nice draft to stoke the fire and carry the smoke away.

Haha...5 in row will have to be a thing of pipe dreams for now. But I tell you what, I have so much fun doing these cooks and seeing what everyone comes up with. The Brethren community is such a great thing! Thanks for checking my cook out!
