View Full Version : First Eye Round - wasn't too bad

Walking through a big box club I saw a sale on Eye Round beef and picked up a 6lb slab. Once home I looked online as to the best way to smoke it. Wasn't getting many good info other than slice it cold and use for sandwiches. Most thought it was too lean a cut of meat.

I put it in the smoke at 225 degrees until it hit 140 with mesquite/apple, pulled it and wrapped it in foil and a towel for 30 minutes. Sliced it and tasted the juiciest roast I've had in a while. I also threw some beets in the smoker as well. Not too shabby....

Looks great. Always wanted to try one but thought might be too tough. Yours look moist and juicey though !

Cooked an eye of round this weekend pulled at 145 wrapped and left set for 2 hours. turned out pretty good. Pulled from frige tonight and shaved it with the slicer and made some killer sandwiches on the pannini with horseradish.:-D

I grew up on eye of the round. Many do not like it because it is hard to get it to come out right. Very lean but at the same time a thick cut. I like to season mine well in advance. 48 hours or so. Needs to be cut thin. Helps to serve with an au jus.

Eye of round is great.smoked lean & sliced thin for Philly steak sandwiches.

I like to inject mine with Worcestershire and beef broth. Then let is sit overnight. Smoke with hickory to 135-138 IT. Let rest for an hour and slice thin for sandwiches. good stuff!
