There's a "Mini" Throwdown going on, and I decided to get in on the action. Go easy on me, Its my first Throwdown.

I got myself a big old packer brisket and trimmed it up pretty heavily.

Gave it a good rubdown with some Oakridge Black Ops

Then I went out and got the UDS Fired up

I called up some buddies, as there was no way I could eat all this myself. As you can see, they are a lot of help. They decided my fridge was too full of beer. That is no longer a problem..

So... Me and the boy were watching a video on the interwebs the other day about how "mini cooking" was a thing in Japan. Its crazy. Look it up. Anyway, we starting talking and decided we should try it. I immediately started building little grills and smokers.. Went through a couple different versions and settled on what you see. Getting the coals rolling and staying lit was the biggest challenge. I used a map torch for that.. The scale on this stuff is crazy hard to work with. I carved the brisket and a bunch of steaks from a small piece of Chuck eye... Just to give you an idea...

And a 1/2 thick brisket only takes about 30 minutes to cook, fyi.. Although I have no idea what the temp in that little cooker was.. We ate it when we were done, and it was delicious. Thanks for lookin
