Did a big cook overnight with the intent having some burnt ends for lunch today. Cubed up the brisket point, tossed them with some au jus from the brisket, and sprinkled them with some additional rub. I put them on the smoker about 1130am. After about a half hour, the temp was holding in the 300-325 deg range. So, it was looking good.

I figured I was safe to run an errand. I got back an hour later only to find the smoker at almost 400 deg. Visions of incinerated brisket chunks danced in my head. When I pulled the cover off the UDS, I could hear them sizzling. I immediately pulled them.


OMG! All I can say is they are the best burnt ends I've ever done! Slightly charred and crunchy on the outside, and moist and smoky on the inside. In the past, I've done them at a lower temp, but couldn't ever get any char on them before they would dry out. The higher heat crisped up the fat on the outside and caramelized the sugar in the rub quite nicely.

So, disaster was averted and I found the secret to great burnt ends.

I'm gonna have to try that. That picture says it all. Looks real tasty.
