Got some new rubs coming in the mail today! Meat Church Holy Cow, Yardbird, and Slap yo daddy jailbird + all purpose!
Tomorrow I'm probably gonna smoke a chuck roast, a chicken, and a rack of ribs! to try each one out!

Boneless pork chops, boneless chicken breast, and brats will be cooked on Friday with leftovers vacuum sealed for later. Saturday will be either a whole pork loin or Boston butt depending on which is on sale since the ad says BB but shows a whole pork loin.

I've been dry brining a brisket this week to make Montreal smoked meat. My husbands request. He works for a Canadian company and has had it a few times up north. Found a recipe so giving it a try.

Gonna finally do a brisket on Saturday. I've never done one and am looking forward to trying one out in the PBC.

Just received but have not installed a new PID controller (Savannah Stoker V4) and a thermal blanket for the Traeger Texas. Gonna put it all together and try out some Costco boneless beef short ribs on Sunday. Thinking of treating it like a small brisket.

Got a 16 lb full brisket and two 5-6 lb Boston butts. That should fill the UDS up! I'm going to try a hybrid approach - start around 5-6 pm with the UDS for 5-6 hours, then finish in oven overnight. We'll hopefully have brisket and pulled pork for lunch!

Camping with my son's Cub Scout Troop this weekend and no smoker will be on hand, so I decided to do beef ribs today.

I've been eating leftovers all week, it's time for some cooked food.
Finished cutting up the last deer I got during rifle season yesterday. I found what should be the tri tip. It's small but I might cook it up tomorrow.
Not sure what else but it will probably be venison. I'm hungry for some backstrap.

Birthday Monday and monthly poker potluck, so I got about 30 pounds of butts to make some pulled pork. Also owe a couple racks of ribs to some friends, so I'll be busy Monday.
It's a four day weekend for me, so Monday counts, right?

Did pork tenderloins for kids tonight. Starting 3 pork bellies on a wet cure for holiday bacon gifts either tonight or tomorrow. Depends if I open a bottle of wine or not.

Yeah, I know I'm late, gonna do a 7lb butt injected with wooster and apple tomorrow on the elec smokin-it 2 using 8oz of mojo hickory.......btw, I had to cut the blocks to fit the box, now I know why these things last so long, they are hard to cut, very dense.
