View Full Version : What should I do with goose breasts?

I've really struggled to use my goose breasts. Could I "guam style" like I've seen people do with brisket?

Other ideas?

Smoke them and cube the meat for goose salad. Great cold.

Goose is very good with a balsamic vinegar marinade and cooked to med rare. A lot of guys I work with Goose hunt and we eat a lot of it at lunch. They shoot so many geese that they make summer sausage and hot sticks out of them which is also very good. Just dont overcook them.

Butterfly and stuff with minced garlic, onion, and parm cheese. Wrap in bacon, roast.

cube, toss in seasoned flour. Fry in pan with butter / oil to med rare (min or 2 per side). remove meat and set aside while you caramelize onions, throw in some garlic, deglaze with red wine and toss goose meat back in and check seasoning. eat with toasted baguette slices... mmmmm kinda like Filet mignon with onions on toast. Experiment with a few herbs like oregano or thyme.

Marinate overnight with 1 part Dales (or soy sauce and a little ginger) to 3 parts beer and 1 part Wishbone italian. Add in some sweet Thai chili paste, bay leaves, crushed garlic cloves, thyme and whatever else you like. Drain and wrap bacon around edge of filet. Grill hot and fast to rare/medium rare.

Even sky carp (Snow Goose) taste good like this!

I've not tried goose that way but bet it would be tasty. If you give it a try, please keep me posted.

I also like chickenfried goose breast with skillet gravy.

Slice very thin (It helps to put in freezer for a few hours) marrinate in whatever you want and then dehyderate. Makes great jerky.

i used to make goose chili every year. cook everything to nearly done then toss in the goose breast meat. return to a simmer and serve. oc better the next day!!

I'm with the chicken fry with cream gravy. Almost have to butterfly them. I have also made a lot of jerky with them.

Hopefully you got the gizzards to go with them. Those are the best part of the whole goose in my opinion. :becky:
