Going to run the maiden voyage of my 22" Kettle this weekend - a nice 4 pound point for pastrami.

My question is do I need to season the Kettle first, and if so, how would you suggest this be done.

Weber correct? If yes, then no. I would just spray the insides with cheap canola oil from Wallymart.

doesn't NEED seasoning. However, kettles cook better with a few cooks done, I would definitely oil the grates first.

Oil the grates and do a heat to form a good coat before your first cook. Spraying the inside - don't forget the inside of the lid - won't hurt and might help when you (only occasionally) clean out the accumulated smoke and grime.

If it helps, I have 5 Webers and use them frequently.

I broke mine in at 550° for about 40 minutes last weekend before I did any cooking.

I "seasoned" mine by doing a couple of greasy short cooks LOL

I'd load it with charcoal and let it go. Give it a good 40 min or so to burn off any oils from packing/shipping. You can use it to learn temp control and how the kettle works.

There's no need to spray or coat the inside of a kettle with anything. In fact, I believe it's the worst thing you can do.

The inside of the kettle is porcelain coated and any build up, especially on the inside of the lid, will likely begin to flake and fall off. Of course, Murphy's Law says it will flake off when you have a big $$ cut of meat on the grill.

A couple of times a year I scrape the lid of my kettles clean and every other cook or so I scrape build-up off the inside of the bowl as well. It really helps to keep your lower vents working right and in proper shape.

Just my $.02. YMMV.
