View Full Version : New Shirley Fab On Order. And Now the Wait......

Well the one I currently have wasn't enough. A few emails back and forth last week and this week and Shirley #2 will be coming my way next year :becky:.

Here's my beast of a brisket helping to put the letter/details in the mail yesterday. It was also excited about the new order as well.

I can't say how lucky I am because I still have my current to keep me company during the waiting period :whoo:. So in theory the wait won't be too bad :crazy:. I'd say something like this will be my last SF, but we shouldn't say things we'll regret :razz::twitch:.

I don't know actually. I guess it will eventually be gone. Getting my new SF was not contingent on selling my current, so to be honest not sure when it will leave...........

Over the last few years since I've owned it I had a bunch of folks offer to buy it off me, but of course I didn't want to get rid of it.

New one will be 30x70 cabinet straight back w/elevated cook chamber allowing a 3rd rack and tons of room.

Did your 24 x 60 just have two shelves? Is it about capacity, I ask because I have a 24 x 70 on order with elevated cook chamber to add a third rack, but I am approaching the no change date :)

It does have 2 shelves. My new build isn't based on capacity issues, just that I have a sickness and want something different :biggrin1:

I didn't go too crazy oddly enough on the options :loco:. Stainless shelf, a few probe ports (though I almost never use mine now :razz:), 3rd rack in warmer, and that cool shelf on the warmer I saw another guy get is about it. Oh and the custom mounted 8 track player that will only play Dan Fogelberg 8 Tracks and is mandatory to have one playing at all times for the smoker to actually cook :clap2::clap2:.

Ok..........so technically I lied...................one of the options listed above is something I'm not getting, but I won't say which one :icon_blush:. You have to guess.

I would love too, but really don't have room for both now that I keep the one in the garage. I'd hate for one to have to be outside again. I could kick my wife's car out of the garage for a while and just have 2 SF's in there with no cars. She's so awesome I know she wouldn't even care.

Yeah the videos and pictures make it confusing to choose :biggrin1:. Looks solid. Ask about the extra shelf on the warmer if you haven't seen the pics of it.

My wife asked me when I got my Shirley what my thoughts were. I said I can't wait to buy the next one. When she woke back up, I told her that this one was just a starter. How could it not be. I mean, just read my signature. How could I resist those videos for too long. :-D

I did it last year and was not too bad , drove 8 hours each day and took me three days .

This is my exact build I picked up last month. The only thing I don't see listed is the rotated warmer. Great minds and all. :thumb:

I did it last year and was not too bad , drove 8 hours each day and took me three days .

Now I feel bad the round trip should take less than 8hrs :icon_blush:

My dad and I drove 32 hours in two days. Wouldn't hesitate to do it again, and again, and again.......

I appreciate it Paul! Short drive for me compared to most. Probably show up at the crack of dawn knocking on your door so excited to get the cooker and then drive the 3.5hrs home and start smoking :becky:. Though staying the night could be fun. Do you guys like bourbon :biggrin1:???

I don't know if you do sausage, but the hangers are great. I have done it both ways on the Shirley, but I prefer to the hangers for sure. I love the evenness the vertical chamber provides and how easy it is to lock in temps to do sausage. I can't wait to do bacon in that bad boy.

Yeah been making sausage for almost a year now. And I've only smoked it on my Shirley. So good.

So I'm sure everyone does this, but already planning my first cook on it and doing some spacing based on grate size. So found another use for the endless roll of butcher paper I have.

The space in marker is my current size and the full butcher paper is new size :-D

I've only cooked on it a few times so far, but I find myself using that side shelf a lot, both when working in the warmer and the main chamber.

Yeah will be a great place for foil, temp stuff, and just ancillary junk. Yours must have been the one that have me the idea :clap2:

Yes, my offset is the first one I know of that has it. Tyler has one on his vertical smoker.

Though I'll be honest I've been wanting to do one of the whole lambs at Restaurant Depot and maybe get a whole goat too.

I'm pretty excited. And glad it is now already paid for :biggrin1:. My first cook might change a bunch. Was thinking whole hog, but now thinking about how many smaller "whole" things I can get into it. So whole lamb, whole goat, whole turkey, goose, whole rib roast, whole donkey...........along with a couple butts a brisket, my homemade sausage, a leprechaun.

Umpa lumpa yes, fatty no. I might start the anti-fatty first cook thread just for kicks and giggles :icon_blush::-P. Though I do have enough ground up sausage meat in my freezer I could make one of my own. But instead of the boring log shape maybe shape it into a dinosaur or something.

I'll have to find more meat to grind. I think I only have about 20lbs of non cased ground up meat in the freezer. :biggrin1:

Yeah I search through the briskets every time i'm at RD or anywhere..............gonna be searching the rest of my life I feel :twitch:. Now just hoping for something decent sized above 20lbs that I'll cook during my first smoke on my new SF.

Yes though I don't know where to go for them. I'd hunt, but dang if I need another time and money intensive hobby like I need a hole in my head :becky:. So I'd need to find someone that has wild boar hunting land and will let me come hunt them and take them home :clap2:

Annnnnnndddddddddddd the reason I love my wife............. As I was sitting here on the forum she got home and knew that only after 2 days of selling my shirley I was planning on my 1st cook on my new one that will be here next year. She also knew that as of yesterday my first cook went from whole hog to whole other animals that I can get many of them on the smoker at one time.............

So she was talking with her co-workers today and randomly chatting about girl stuff and apparently smoking entire animals came up because that is what she does and they let her know about a place that carried whole goats and lambs that might be cheaper or at least comparable than restaurant depot because that is where they get them to smoke :-D!! I've been to a few nam dae muns around me, but none carried whole goats (only stew meat) or whole lambs at all. So this is one near me that I haven't been to that shouldn't have both.

Will probably run there tomorrow or this weekend to scope out prices and if in fact they have what she heard they have. I know places I can get whole goat, but it is pricey. Either way, love that woman. Who they heck else brings up smoking whole animals with their girlfriends???? Other than the ladies that frequent this site of course :mrgreen:
