Smoked a turkey breast this weekend to practice for Thanksgiving as I haven't ever smoked one before. Applewood smoked with cider bourbon gravy. Didn't want to get sick of turkey leftovers already so made comforting enchiladas on this brisk, blustery Chicago night.
First the beautiful turkey breast…

Put together shredded turkey, cheese, sour cream enchilada sauce, etc.

Softened some corn tortillas in hot oil…

I remember the year I got a turkey fryer and hadn't done deep fried turkey before. Fried one 4 weeks prior to practice for the big day and then practiced 5 more times before thanksgiving because it was so good :-D. Just about the same when I first tried smoking turkey :biggrin1:
