Smoked this chuckie on Sunday to use for meals this week.. I find myself throwing extra meat on whenever I have the Shirley running just because there's room..

It was crazy marbled, and so good.

I vac sealed it (after qc). Tonight I put the bag into a pot of boiling water and let it reheat. While it heated, I sautéed a bell pepper, poblano, an onion, some jalapeño, and some garlic.

Chuckie, warm and sliced

Cut a loaf of ciabatta in half and then cut it open. 2 slices of Wisconsin white cheddar on bottom, then loads of chuckie, then peppers and onions, then a little bourbon bbq sauce, some Dijon mustard, and 2 more slices of cheese.

Been awake for about an hour. It's now 5am and I'm to make SRF kobe corned beef and eggs with hash browns.

Bbq AND beer??? Sounds a bit unorthodox, but what the hell, I'll give it a try.

There should be another Shirley trailer in Grayslake by then so you'll get a good look for sure. You might as well just put your order in now. People who didn't even know they needed an offset end up ordering a Shirley after seeing one in person. I have actually seen that happen. :laugh:
