Sunday we decided we needed to put a few things away for winter, so we smoked a couple of double fattys, one maple and one hot. We like to add some of the hot one for chili and the maple for breakfast sammies. Then we also smoked a couple chickens, that we use for chicken salad sammies, so I can take to work. We put on a couple of spares for lunch and to eat later in the week for dinner, and added a couple 5 lb chuckies to pull and add to different things in the future. In all it turned out great, the ribs were great, the chuckies pulled easy, the chickens smelled awesome, and the fatties always turn out outstanding. Didn't get any final pics of the pulled beef, because company came by. It was a beautiful day to be out running the cooker, I hope everyone had a great weekend.

Everything looks delicious. At what point did you pan the chuck roast to get all that beautiful Au jus?

Just so we are clear, you are not putting that amazing looking cooker away that just produced all that amazing looking food...are you?

That would be a shame. I hope you were putting other things away and that just simply fed you while doing that.

Panned the chucks at about 160, then ran at 350 till tender. No I'm not putting her away just yet, but if it gets nasty Iv'e got some meat to fall back on. I was smoking at the week of Xmas last year.

I should have bought an extra cord of wood. I have no intentions of stopping for the winter, and I've already put a good dent in my supply.
