I'm looking to try something different. I have always used gallon ziplocks for marinating meat in the frig. I like the zips for easy clean up afterwards, but that's about it. I'm sure someone makes a nice hard plastic container designed for this. So who are you using?

I use a plastic bag and stick it in a bowl for containment.

Ive found bags to be way more efficient, using way less marinade, than anything else.

Plastic bags just like you. Waste a lot less marinade.

Brother I have really enjoyed these. They have a snap on lid as well as a insert to keep the food submerged. Money well spent in my book.

For marinades, I still prefer the gallon zip lock bags. Anything to avoid dirty dishes, I'm all about it.

For brining though, I got some 8 quart clear plastic containers from a restaurant supply store. They work great because the fit in my fridge without having to take the middle shelf out and the measurements are on the side of the container.

I use large 12x14 bags in my chamber vac; no leaks and the vac gets the flavor in quickly

A local food chain, Lowes Foods, uses icing out of white food grade containers with lids. When I need one I go by there and they will give them to me because they throw them out. 5 gallon buckets for vanilla icing and 2 gallon buckets for cinnamon roll icing. They clean up well. These are especially good for brining. I put an airlock on one of the 2 gallon buckets and make kraut in it.

those were made by Tupperware and are no longer made. I have one and use it for the exact purpose that you are inquiring about.

Ziplock bags mostly, except for big stuff. Then whatever pot or pan it will fit in. Nothing special. I do have one of the Foodsaver marinading things, use it for speeding things sometimes. It does work well.

Question for those that use Zip lock type bags. Do you remove all the air?

I have a 5-gal pickle bucket for brining turkeys.

For smaller stuff I went to Wally Word to the Rubbermaid isle and bought some containers similar to the ones in post #6. The bigger stores have a lot of selection on plastic containers. Might also try BedBath and Beyond if you have one.

I use these instead of zip bags:

Bucket Liner - Disposable Pail Liner - 5 Gallon Bucket - Brine Bag - - Amazon.com@@AMEPARAM@@http://ecx.images-amazon.com/images/I/51P-nPH7G-L.@@AMEPARAM@@51P-nPH7G-L

Either in a 5 gallon bucket as shown, or in the Cambro below for smaller quantities. The Cambros are easier to fit in my BBQ fridge.

It really depends on how much or what size you wish to brine or marinade.

For turkeys and hams, I use a five gallon bucket with a food safe disposable liner (http://www.starkboards.com/Disposable_Cutting_Boards.html) for easy fill and easy clean-up. For smaller items I use the Carlisle Storplus (http://www.equippers.com/search/results.asp?keywords=carlisle+storplus&search_submit=Search#/?keywords=carlisle+storplus&search_return=all&page=3) line of containers (pints, quart, gallon, and small rectangular. While they clean up easy, I still use a food safe pan liner (http://www.starkboards.com/Disposable_Cutting_Boards.html) from starkboards.
