Decide Monday to take out a pair of pork butts from the freezer to cook today. I got up this morning at 8 and started the fire in my Akorn. As it came up to temp. I prepared the pork with salt, pepper, and a rub called Larry's Rib rub, it is great on any pork. I put them on when I hit TBS and the dome therm hit 300. I figure I am cooking around 340-360, I am not using my maverick or heatermeter on this one just going to let things do what they may and see how it goes., I am using my Tip Top Temp device to help regulate temp some. Here is a pic of them about 30 minutes into the cook when the new batteries arrived.

I would say you are going to have some fine pulled pork for dinner.

How much charcoal and wood did you use and did you get good smoke absorption?

I have been using the same load of charcoal (which it holds maybe 8 lbs or half of a big bag) for my last 3 cooks and still have charcoal for maybe 2 more cooks. I add cherry wood for flavor and use 5-6 fist size chunks. It does have a smoked flavor but it is not as pronounced as when I had my offset.

Thanks for the info. Yep they are stingy on the fuel, thats one thing I really like.
Cherry is my goto wood also for my offsets.

After seeing your post and pics I think I'll try a butt in mine, but maybe go with pecan
and a little oak to try for a heavier bark.

The bark was not real great because I didn't season these two very heavily because a couple of folks eating them have trouble with spices and heat. I usually season mine with a heavy coat and it gets a better bark.
