Hadn't made one of these in a long time.
I smoked some red angus chuck with a bit of hickory for 2 hours, then added onions and beef stock, covered and cooked til tender.

Ate chuck for supper that night then made beer bread the next day.
3 cups self rising flour
about 1/4 cup of sugar
a couple pinches of salt
a couple pinches of baking powder
one 12 oz beer

made a smokey cheese disc using a combo of provolone, moz and american..

while the bread baked I fried onions and bacon...
warmed the smoked chuck.

Thanks Uker! I use what ever cheese that sounds good at the time OR whatever I have on hand. I usually chill it in the pan while getting things ready.

I'm with you! Some beer breads are too dense for me. I add extra baking powder to make the bread a bit lighter.
I'm also a wuss on strong beer flavor. I use Coors Light. Some beers are too strong and take over the sandwich.

I like to make smokey cheese discs for sandwiches. You can blend what ever kind of cheese mixture you like and the addition of smoke is great.
I oil the pan before putting the shredded cheese in and chill before removing the disc from the pan.

Yes it was from the shoulder. One of my ranch friend's red angus beef. He's trying to convince me that his red angus is better than my black. (an ongoing friendly battle) :-D
