View Full Version : UDS pork loin back ribs

Well I took the risers off the UDS and it seems to work a little better at holding temps. I think part of my issue is I am too impatient and start adjusting too soon. I spike up to 270* because I didn't let the smoker settle and took off a vent. Now she's holding at around 245 with one 3/4 valve open and one 1/4 open. I also used the chimney with 15 briquettes instead of the weed burner.

So I am smoking a pair of loin backs with little help of CAO and Knob.

Nice pairing of the smoke and whiskey. Yes it is a slow dance. I bet you don't smoke that cigar in a hurry. Right?

One of my favorites(CAO), always in the rotation. You'll get that UDS humming like a Singer sewing machine after a few cooks.

I think they turned out all right. 2.75 hrs of cooking over apple wood.

Less than three hours cook time at 245* and produce ribs that look that good? I'm doing something wrong. Nice cook right there.

Thanks for the kind comments. Sorry, I did t get a picture of the entire plating. I added fresh picked fried okra okie style with corn meal, bread with garlic butter, topped with grated Parmesan cheese and rice pilaf.
