tried CocaCola in foil instead of water. I thought it could affect moistness (more moistness)
No way.
It didn't work at all. More liquid in foil than usual.

01:40 hours in then moved in foil

in foil for 40 minutes @250F then I let it rest in foil + blanket for 20 min.

then I let the slab naked meat side down to dry a bit. For 40 min @250F

then the ribs were ready to sauce and serve.

Other than more liquid in the foil (not the real issue) were the ribs okay? Cuz they look amazing (apologies to Meathead). Usually I use a little beer in the foil just as the Coke. And, Yes, your pictures are outstanding.

nice! you've inspired me. i'm supposed to smoke some chicken this weekend for a family gathering and i was tryin to figure out what sauce to make. i recently found an old recipe my grandma gave me for bbq sauce with coke in it. it's been a long time since i made it so i'm gunna go with it

If you want moist ribs don't skin 'em and don't over cook 'em no farking foil necessary.

Photography is outstanding as usual. Ribs look so tasty. That looks like a lot of work trimming those ribs. My idea of trimming ribs is getting them out of the cryo-vac and washing them off. I applaud your dedication to detail. :clap:

Did you really use an oscillating saw to trim the ribs? I need to incorporate power tools in to my cook days . . .

Jim, ribs tasted great but really I couldn't find the CocaCola taste among rub and sauce!

I tried w/o foil, naked "all night long" but to much bark proportionally to the meat, IMO.
