View Full Version : My Sunday Smoke Ribs, Chicken, ABTs

I had some friends over for Sunday dinner, what a great excuse to run the smoker!

First things first the finished ribs. I usually don't foil my ribs but tried it today to see the color difference. The nice reddish ribs were foiled after about 3 hours, the much darker ribs were not.

Finished chicken, testing out a mayonnaise slather to improve skin texture. Quick slather with mayo, rub sprinkled on top. They taste great. This batch was mixed on skin tenderness, my previous batch prepared the same way was much better. This batch it seemed like one side of the thigh would be good and the other tough. I think that is because this batch was right next to the fire box and the extra heat toughened up the skin on the side facing the heat.

ABTs Nothing fancy, a Jimmy Dean Hot sausage mixed up with cream cheese and pork rub, then stuffed and wrapped in bacon.

Finally I got a new cast iron pan so I had to use it. After I seasoned it in the oven I made some fried spicy pickles for a snack while I was smoking.

It was a very delicious Sunday night! I also got to use a new toy I replaced a broken wireless thermo with an igrill2. I used it to watch the smoker temperature, and the chicken once it went on. I like it a lot, had some issues with the temp being slow to updated on my phone but overall it worked better than the old one it replaced.

Weather looks good and I can't wait to run my smoker again next weekend!

Fried pickles? Great idea! I'm doing it next time. So how did the foil ribs compare to the non-foil ribs taste/texture wise? I'd like to try half rack of each and see for myself! :-D

The taste was indistinguishable, the un-foiled ribs were noticeably dryer.

Both those rib racks look great. I would make no distinction. Just slice em up and pass a few my way.
