I was thinking about doing something similar to this. What type of cheese would you suggest for this?

Any newbie suggestions on a fatty like this?

Don't buy cheap sausage meat. I like to add some crack black pepper, chopped chilli peppers/jalapenos to mine.

I'm with Ron on this one.

Fatties are an amazing opportunity to try different rubs and tweak cooking temps.

That said, go crazy once in a while... and tell us about it (with pics). :)

I just did my first one this past Sunday. Flattened in a bag then rolled with jalapeno and cheddar. I may have left it on a little too long but it was delicious. Pictures in thread subject "How to stuff a fatty"

I suggest starting with a naked fatty. It will be a good baseline to work from. Oh, and they are freakin delicious!

I've done fatties before but did my first naked one on Monday to season my updated UDS...mate, that was good eating.

As Ronelle says, naked fatties rock!

Actually all fatties are good, that's one of the beauties of them, and the possibilities are endless!
