View Full Version : New Offset Break-in with Butt and ABTs

I thought I was defrosting a 5lb butt, but it turned out to be 2 pieces (3.5 and 1.5 lbs) that was supposed to be made into jalapeno sausage. Oh well, still had to go for it.

Hit 160, then wrapped in foil until probe tender around 200:

Also threw on some ABTs for the last 2 hours:

Plated with ranch potatoes, 2 dipping sauces (shack attack and a homemade sweet BBQ sauce), and of course a glass of red wine.

So far so good. I'll have to see how it performs on a longer cook.
