Meatloaf with a twist

Fired up the Stumps today to make a little meatloaf. I made a big batch awhile back and found one loaf in the back of the freezer today. I did a blend of 4 pounds chuck, one pound of pork, one pound lamb, and half pound Italian sausage.

With this one I thought I'd try something different and use my coffee rub. I didn't use any sauce this time. It was a nice change. I made cauliflower mash to go along.

In the end what is meatloaf but a giant log shaped hamburger...and who don't love that?! The coffee crust worked really well with the subtle lamb flavor. This ones a keeper.
