Back in the saddle again!

I haven't cooked any BBQ since my wrist injury but now that I have clearance from the doctor to do more, the first thing that Parsley Lady requested was ribs. She's wanted them all summer and even went so far as to order them in three different restaurants. Not good. We also judges an amateur rib cookoff and her table had one good rib and mine had two.

So... Tonight is St. Louis trimmed spares and I tossed on a naked Jimmy Dean Sage fatty to use later in the week for biscuits and fatty gravy. We're also having hash brown potatoes and Captain Ron's Apple Slaw.

The ribs rubbed with Simply Marvelous Pecan and Sweet and Spicy...

It's amazing what I can't do with my left hand :-D

Plus, until last week I was restricted in the amount of weight that I could lift, so simple things like moving the smoker, lifting a 40 lb. bag of pellets, etc. were completely out of the question.

2 1/2 hours later and the ribs are ready for foiling and the fatty is done.

Turn in time for the ribs (dinner) is 7:30

Sorry for the delay. We had to eat :-D

It is so cool what some time, smoke and love can do to pork ribs! Of course, being pork in the first place helps :becky:

Total cook time was 2 1/2 - 1 1/2 - Glaze at 265. One rack was just slightly over-cooked by competition standards, but perfect for eating, and the other rack was perfect by comp standards.

I also made Parsley Lady's favorite hash browns and Captain Ron's famous Apple Slaw.

Those are some mean looking ribs, and that hash sure looks delicious, too.

Great looking plate. Hash browns with ribs hadn't crossed my mind, but they look goof together.
Goog to see you back cooking. Not sure how you were able to go without cooking for so long.

Great looking chow there Sir Ron! I see that the temporary, although mandatory time off did not cause any damaging effects on your ability to produce some outstanding ribs and side dishes. Well done Sir!!

Looks Great Ron Glad you are healed

It's getting close, George. I can tell that I over did it yesterday. My wrist is sore this morning, but it felt good to be doing stuff again.

So far ribs has been a pain for me on the smoker! Not sure why. Just cant seem to get them right.

based on those pics...I think you could cook better with one hand than most people do with two.
